Good Eats

Mmmm ...so what is that? THAT my dear friends is Spaghetti Squash!

Spaghetti Squash has a moist and mellow nutty flavor. The unusual flesh is like noodles and they are ripe when they turn from green to yellow and come off the vine easily. They are high in Vitamins A and C and some B vitamins. This veggie is a great source of fiber and when deep yellow they contain a fruitful amount of beta-carotene.

Tonight I planned on heading to what was going to be a fun time seeing the open house for a new center for the arts. We got detoured however because of traffic. Seems I am still learning patience when it comes to these things. Our detour led us to the Sunflower Farmers Market where I bought some savory berries and other important items. It was there that I remembered being gifted an early picked spaghetti squash among some tomatoes and zucchini, All home grown :) So for dinner E, one of my bestest friends ever...and one of my freshman roomies, and I had spaghetti squash and salad for dinner. But we snuck in dessert first with Hawaii man, which included raspberries, blue berries, evaporated milk, and sugar. What a delicious day.

It even started out with cocoa puffs. I think every day is better when it starts with chocolate.
