Back in San Antonio


So I went off to BYU for the winter semester and had fantastic Roommates!! :) The ones I had known before I got to know even better and the new ones well I love all of them dearly. Being back in Texas is wonderful. Its humid, hot, and relaxing. And I did miss my family a lot more than I realized. Well...I am off to new adventures tonight at FHE at the singles ward again. I will see people I havent seen in months! YAY! Just gotta go change my shirt after spilling the most delicious chocolate pudding on it.

Silky Chocolate Pudding
Adapted from John Scharffenberger, via Wednesday Chef

Serves 6

1/4 cup cornstarch
1/2 cup sugar
1/8 teaspoon salt
3 cups whole milk
6 ounces 62% semisweet chocolate, coarsely chopped (I used good quality semisweet chocolate chips; use 70% bittersweet if you want more of a dark chocolate kick)
1 teaspoon pure vanilla extract

1. Combine the cornstarch, sugar and salt in the top of a double boiler. Slowly whisk in the milk, scraping the bottom and sides with a heatproof spatula to incorporate the dry ingredients. Place over gently simmering water and stir occasionally, scraping the bottom and sides. Use a whisk as necessary should lumps begin to form. After 15 to 20 minutes, when the mixture begins to thicken and coats the back of the spoon, add the chocolate. Continue stirring for about 2 to 4 minutes, or until the pudding is smooth and thickened. Remove from the heat and stir in the vanilla.

2. Strain through a fine-mesh strainer (or skip this step if you’re a slacker like me who is absolutely certain that there is nary a lump her puddin’) into a serving bowl or into a large measuring cup with a spout and pour into individual serving dishes.

3. If you like pudding skin, pull plastic wrap over the top of the serving dish(es) before refrigerating. If you dislike pudding skin, place plastic wrap on top of the pudding and smooth it gently against the surface before refrigerating. Refrigerate for at least 30 minutes and up to 3 days (ahem, good luck with that).


Ok I stole this recipe from this awesome website ( http://smittenkitchen.com/ ) . I am excited to delve into the culinary arts more deeply now that I am home and cooking most of the dinners again :D But honestly I am a chocolate pudding person. I try all of them. Hahah usually because I am looking for a new kind of pudding to put into my favorite dessert: ECLAIRS. This recipe makes a creamy, hot (its better that way), and truffley kinda of taste. Its fantastic. For your convenience I will also post the website. Oh jeez this woman is amazing. I think I am going to start a COOK THIS list. Where I put all of the things I want to learn how to cook and then cook em! Wish me Luck.

I took my pups on very long walks today and they both enjoyed the much needed alone time with me...At least I was thrilled and quieted by the time I needed to walk and to be with them :) Tomorrow we will go even further because well thats just how it goes. You go until you cant go any farther! Hopefully afterwards the family will go swimming or to a park for disabled children so my sister can have some fun before her surgery on wednesday. I am so proud of my little big family and how much we have accomplished. Mothers day was yesterday and I thanked my lucky stars all day for the wonderful, loving, patient, respectable woman, I am blessed to call Momsy. She is the best mom for me. I am glad I have been raised in the home I have, the way I have, I wouldn't trade it. I love who I am and everyday I try to be more like my mom in the good ways and let go of some of the bad habits I have picked up. What would I do without her? Well I wouldn't be as happy thats for sure....or good. I probably wouldnt be as good of a person if it weren't for my dearest mother.
